Guide to Dairy Substitutions - Fork and Beans

This guide gives you a bunch of dairy-free options that you can use in vegan baking and cooking. These alternatives are great for people who are allergic to dairy or who are trying to live a vegan lifestyle.

Ingredients:

  • 1 cup unsweetened almond milk

  • 1 tbsp apple cider vinegar

  • 1 cup vegan butter

  • 1 cup coconut cream

  • 1 cup cashews, soaked and drained

  • 1/2 cup nutritional yeast

  • 1/4 cup lemon juice

  • 2 cloves garlic, minced

  • 1 tsp onion powder

  • 1/2 tsp salt

  • 1/4 tsp turmeric

Instructions:

Apple cider vinegar and almond milk should be mixed together in a small bowl


Let it sit for 5 minutes so the milk can curdle and turn into vegan buttermilk


Set vegan butter in a saucepan and melt it over medium range heat


Mix in the coconut cream with a whisk until it's smooth


Soak the cashews in water, then add the nutritional yeast, lemon juice, garlic, onion powder, salt, turmeric, and vegan buttermilk


Blend the ingredients together


Mix until it's smooth


Put the cashew mix into the pan with the coconut cream and melted butter


It will take about 5 minutes of whisking until everything is well mixed and hot


Take it off the heat and let it cool down


In recipes, you can use it instead of dairy

Creamy Chicken Rice Soup

A comforting and creamy soup loaded with tender chicken, rice, and vegetables. Perfect for a cozy night in or a comforting meal any time of the year.

Ingredients:

  • 1 cup cooked chicken, shredded

  • 1/2 cup rice

  • 4 cups chicken broth

  • 1 cup milk

  • 1/2 cup heavy cream

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions:

Melt the butter in a big pot over medium-low heat


Cut up the garlic, onion, carrots, and celery and add them


For about 5 minutes, cook until the vegetables are soft


Add the flour and stir it in


Cook for one to two minutes, until it turns yellow


Slowly add the chicken broth while stirring all the time to avoid lumps


Set the rice aside and add the water


About 15 to 20 minutes, or until the rice is soft


Add the heavy cream, milk, and cooked chicken and mix well


Add pepper and salt


Simmer for five more minutes, stirring every now and then


Check the seasoning and make changes if needed


Serve hot with fresh parsley on top

Ingredients:

  • 8 oz penne pasta

  • 8 oz mushrooms, sliced

  • 1 bunch asparagus, trimmed and cut into bite-sized pieces

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream

  • Salt and pepper to taste

  • Grated Parmesan cheese for garnish

Instructions:

Follow the directions on the package to cook the penne pasta until it is al dente


Remove the water and set it aside


Warm up the olive oil in a big pan over medium-high heat


For about one minute, until the garlic smells good, add the minced garlic


Add the chicken breasts that have been cut into slices


Cook for about 5 to 6 minutes, or until they are browned and fully cooked


Put mushrooms slices in the pan and cook for about 5 minutes, until they dry out and begin to brown


The asparagus pieces should be added and cooked for three to four more minutes, or until they are tender but still crisp


Add the heavy cream and chicken broth and stir to mix


Bring it to a simmer and let it cook for two to three minutes, until it gets a little thicker


Add pepper and salt to taste


Toss the cooked penne pasta into the pan with the rest of the ingredients until everything is well mixed and hot


Grate some Parmesan cheese on top and serve hot

Potato and Steak Salad

A new way to enjoy a hearty dinner of meat and potatoes. This Potato and Steak Salad has hearty potatoes and steak, as well as fresh mixed greens, cherry tomatoes, and a tangy balsamic vinaigrette.

Ingredients:

  • 2 medium-sized russet potatoes, diced

  • 1 lb sirloin steak, thinly sliced

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 2 cups mixed greens e

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • Salt and pepper to taste

Instructions:

Boil the diced potatoes in a pot of salted water until fork-tender, about 10-12 minutes


Drain and set aside


Season the sliced sirloin steak with salt and pepper


In a large skillet, heat 1 tablespoon of olive oil over medium-high heat


Add the steak slices and cook for 2-3 minutes per side for medium-rare, or longer to your desired doneness


Remove from heat and let it rest for a few minutes before slicing it into thin strips


In a large salad bowl, combine the cooked potatoes, sliced steak, cherry tomatoes, red onion, and mixed greens


In a small bowl, whisk together the remaining 1 tablespoon of olive oil and balsamic vinegar


Season with salt and pepper to taste


Drizzle the dressing over the salad and gently toss to combine


Top the salad with crumbled feta cheese

Homemade Oatmeal Cream Pies

Enjoy the nostalgic flavor of these homemade oatmeal cream pies. Soft and chewy oatmeal cookies are paired with a decadent cream filling to create a classic treat that's ideal for sharing.

Ingredients:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 cup packed brown sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 and cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • teaspoon salt

  • 3 cups old-fashioned oats

  • 1 cup raisins

  • 1 cup chopped nuts optional

  • 1 cup unsalted butter, softened for filling

  • 3 cups powdered sugar for filling

  • 2 teaspoons vanilla extract for filling

  • 3-4 tablespoons heavy cream for filling

Instructions:

Warm the oven up to 350F 175C and put parchment paper on baking sheets


Melt 1 cup of butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy


Add the eggs one at a time while beating, and then mix in the vanilla


Mix the flour, baking soda, cinnamon, and salt together in a different bowl


Slowly add this dry mix to the wet mix and make sure it's well mixed


Add the oats, raisins, and chopped nuts and mix them in well


Put round tablespoons of dough on the baking sheets that have been prepared


The cookies should be baked for 10 to 12 minutes, or until they turn golden brown


Let the cookies cool for a few minutes on the baking sheets before moving them to wire racks to cool all the way


First, soften 1 cup of butter and beat it until it's smooth


Add the powdered sugar slowly while beating the mixture until it is smooth and fluffy


The vanilla extract should be added


One tablespoon at a time, add heavy cream until the filling is the consistency you want


Spread a lot of filling on the flat side of a cookie that has been cooled, and then put another cookie between them


Do this again with all of the cookies

Ingredients:

  • 1 pizza dough

  • 1/2 cup Thai peanut sauce

  • 1 cup cooked chicken, shredded

  • 1/2 cup red bell pepper, thinly sliced

  • 1/2 cup red onion, thinly sliced

  • 1 cup mozzarella cheese, shredded

  • 1/4 cup fresh cilantro leaves

  • 1/4 cup chopped peanuts

  • 2 tablespoons olive oil

  • 1 tablespoon soy sauce

  • 1 teaspoon garlic powder

  • 1/2 teaspoon red pepper flakes

Instructions:

Preheat your grill to medium-high heat


Roll out the pizza dough into your desired shape and thickness


In a small bowl, mix the olive oil, soy sauce, garlic powder, and red pepper flakes


Brush the olive oil mixture over one side of the pizza dough


Place the pizza dough, oiled side down, onto the grill grates

Place the pizza back on the grill and cover it with a lid


Grill for another 5-7 minutes, or until the cheese is melted, and the crust is crispy
